Our dinner party tonight was a success!!
Anna, Amanda, Mary, Michelle and I decided we wanted to get to know more people so we had ourselves a little Mexican Dinner Fiesta. I made my mom's Cafe Rio Chicken. It was easy and cheap. I had many requests for it so here is the recipe:
3 lbs chicken breasts
1 TBSP cumin
1 small bottle Zesty Italian Dressing
3 cloves garlic, minced
1 TBSP chili powder
Combine all and cook on low all day in crock-pot. Drain juices (I don't), reserving half a cup. Shred chicken and mix back with reserved jucies. Enjoy!
Serve with cut up lettuce, salsa, onions, tomatoes and a corn tortilla.
